Plan:
- Grate or dice quince (skin-on), weigh
- Chop the same weight of rhubarb
- Add lemon juice approx a large lemon to 1kg of “fruit”
- Same weight of granulated sugar as fruit weight
- Lemon zest?
- Ginger?
Cook until set point.
Consider: boil up the quince cores and strain for extra pectin?
