Plan:

  1. Grate or dice quince (skin-on), weigh
  2. Chop the same weight of rhubarb
  3. Add lemon juice approx a large lemon to 1kg of “fruit”
  4. Same weight of granulated sugar as fruit weight
  5. Lemon zest?
  6. Ginger?

Cook until set point.

Consider: boil up the quince cores and strain for extra pectin?
