2026 Quince & Zucchini Chutney

As per the Hugh-FW “Glutney” Recipe except with this ingredient set:

* our own produce

  • 595g green & yellow zucchini - seeded, diced
  • 597g vranja quince - peeled, cored, diced
  • 992g bramley apple - peeled, cored, diced (community orchard windfall)
  • 1016g jersey giant tomato - blanched, peeled, diced
  • 165g trinidad perfume chilli - fine diced

* bought ingredients

  • 617g brown onion - diced
  • 564g light brown onion
  • 564g sultanas
  • 845g Aspalls cyder vinegar
  • 282g tap water
  • tsp salt
  • boquet garni
    • 3 mace blades
    • 4 black cardamom
    • couple of thumbs of ginger
    • 1 tbsp coriander seed
    • 12 cloves
    • 12 black peppercorn
    • 4 star anise

All in a big pot on the stove and then simmer…
